Three hundred and fifty decanters of the 35 Year exist anywhere in the world. On 19 August we open one of them, alongside a guided flight through the range and cocktails from Tom McHugh.

The evening

One room, one night, one bottle

Oak & Origin and Flor de Caña take over Brooksy at the Amora Hotel Sydney for an evening built around Nicaragua's most closely held rum.

The night runs as a guided flight through four expressions of Flor de Caña, from the 12 Year through to the 35, with cocktails from Tom McHugh either side and canapés coming out of the Brooksy kitchen throughout.

The 35 Year is the reason for the evening. Only 350 decanters were released worldwide, and only twenty people will taste it in this room.

The table

From Gary Thakur and the kitchen at the Amora. The cold service runs first, alongside the arrival cocktails. The hot canapés come out staggered through the flight, so there is something in your hand as the rum moves from twelve years to thirty-five.

350 in the world

The taste of time

Thirty-five years in American white oak at the base of the San Cristóbal volcano, drawn from the family's private cellar and released to mark 135 years since the distillery was founded in 1890.

It is the oldest rum Flor de Caña has ever released, shaped by Tomás Cano, the distillery's Maestro Ronero. Only twenty people will taste it on the night. Rather more of you can own it.

Hand-finished crystal with ridges that echo San Cristóbal itself, an obsidian stopper fitted to its own decanter, a walnut case engraved with the flora from the base of the volcano, and a numbered certificate signed by the family.

Twelve years to thirty

Three of these are poured on the night. The fourth is the one that gets closest to the 35.

    Flor de Caña 12 Year

    Vanilla and dried fruit. The easiest way into the house style, and the one that lives on the shelf rather than in the cabinet.

    Flor de Caña 18 Year

    Cocoa and toasted nut under the oak. If you only take one bottle from the night, most people take this one.

  • 25

    Flor de Caña 25 Year

    Twenty-five years under the volcano. Dense and slow, and the point where the range stops being a rum you mix.

  • 30

    V Generaciones 30 Year

    Not on the flight. A single barrel at 45% marking five generations of the family, and the closest you get to the 35 without the decanter.

Before you book

There are twenty places and they are allocated in order of booking. Your booking covers the arrival cocktail, canapés through the evening, the guided flight of four expressions, a pour of the 35 Year and one entry in the draw.

Please arrive by 7:00pm so the room can start together. The flight runs to a set order and latecomers may miss the opening pours.

The draw is one entry per ticket, drawn on the night, and the winner must be present. The prize is a Flor de Caña 35 Year 100ml decanter in its keepsake case and cannot be exchanged for cash.

Let us know about dietary requirements by replying to your confirmation email at least five days before the event so the kitchen can plan for it.

Bookings are non-transferable without notice to us. If you can no longer attend, contact us as early as possible and we will do what we can.
