A vatting of Scottish single malts aged between roughly 12 and 27 years, shipped to Burgundy and left to evolve in damp underground caves. The result isn’t just sherry influence… it’s immersion. Dense, old-world, and unmistakably Couvreur.
The nose opens deep and brooding. Dried figs, raisins and stewed fruits lead, backed by leather, pipe tobacco and dark chocolate. There’s a damp cellar note here, earthy, slightly musty in the best way, giving it that unmistakable aged character.
On the palate it turns velvety and composed. PX sweetness rolls in first, rich sultanas, dates and molasses, before spice and oak build underneath. Clove, nutmeg and a touch of bitter cocoa keep it structured, never tipping into syrupy territory.
The finish lingers long and quietly powerful. Dried fruit, tobacco leaf and polished oak carry through, with a gentle dryness that pulls everything back into balance.
This isn’t a bright, flashy dram. It’s layered, mature, and built on patience, where cask, time and environment have done the heavy lifting.
