Michel Couvreur built his name on cask influence over distillery identity. Scottish malt whisky, shipped to Burgundy, then matured in humid underground caves, slowly shaped by PX sherry casks into something altogether different. It’s not trying to be Scotch, it’s not trying to be French… it just does its own thing, and does it well.
On the nose, it opens deep and layered. Rich dried fruits, raisins and dark chocolate lead the way, followed by roasted almond, baking spice and a gentle thread of earthy peat. There’s a cellar-like richness here, dense but lifted.
The palate is where it all locks in. Creamy sherry sweetness rolls through first, think fig, honey and marzipan, before the peat and spice build underneath. Liquorice, oak and peppery warmth give it structure, keeping everything balanced and composed.
The finish lingers with intent. Dried fruit, toasted oak and soft smoke carry through, with a slightly bitter edge of spice and liquorice that keeps it from ever tipping too sweet.
This isn’t your typical Scotch profile. It’s a whisky shaped by place, patience and cask, where Burgundy meets smoke and sherry in equal measure.
