Finished in hand-coopered sherry octaves
Octaves hold around 50 litres, a fraction of a standard cask. The spirit meets far more wood, so the sherry builds fast and runs deep.
The whisky
North British has been distilling grain whisky in the heart of Edinburgh since the 1880s. Long ageing turns its spirit soft, sweet and aromatic, and twenty-eight years have done exactly that here.
Darkness then finished it in small oloroso octaves, adding fruit, granola and vanilla, with spiced nuts and mellow oak in the background. An elegant sipping whisky with a lot of age for the money.
