Calle 23 is the work of French biochemist and engineer Sophie Decobecq, who applies laboratory rigour to tequila production in the highlands of Jalisco. Agave is cooked in stainless steel autoclaves, fermented in stainless tanks on proprietary yeast strains selected per expression, and double distilled. The Añejo rests sixteen months in American ex-bourbon barrels.
