Batanga is made by Casa Orendain, one of the four founding families of the tequila industry, from estate-grown blue Weber agave in the lowlands around Tequila. The piñas are hand-harvested and slow-baked in masonry brick ovens, fermented with a yeast strain cultivated at the distillery to the family's original formula, then double distilled and bottled without ageing.
