During wartime supply shortages, Australian fortified wine producers turned to native timbers for their casks. Archie Rose tracked down a small parcel of these 1930s-era red gum casks — seasoned by decades of apera — and filled them with its six-malt spirit for more than four years of maturation. The result is a whisky that could not have been made anywhere else.
