Antoine Amédée Peychaud was a Creole apothecary who arrived in New Orleans in the early 1800s and began mixing his family's gentian-based tonic with cognac. That drink became the Sazerac, and the bitters became the one bottle no serious back bar goes without.

What it delivers

  • A gentian base carrying bright anise and cherry notes
  • Lighter and sweeter than a classic aromatic, with a floral lift
  • The distinctive red hue that marks a properly made Sazerac
  • A little goes a long way — dashes, not pours

Why it matters

  • Essential to the Sazerac, and a New Orleans institution since the 1830s
  • Works where Angostura would overwhelm — lighter spirits, brandy, rye
  • Try it in a Vieux Carré, a Seelbach or over a simple whiskey and soda
  • A cornerstone bottle for anyone building a cocktail cabinet
