Jerusalem artichoke tartlet with smoked Gouda, balancing earthy sweetness and gentle smoke to complement the oak-driven character of Eagle Rare.

Orchard fruit, orange peel, honeycomb and polished oak.
Course Two
Yellowfin Tuna
Yellowfin tuna with piquillo peppers, cumin and Eagle Rare bourbon mayonnaise, combining bright freshness with subtle spice and sweetness.

Toffee, vanilla bean, toasted almond and mature oak.
Course Three
Wagyu Intercostal
Wagyu intercostal with miso celeriac and Eagle Rare bourbon glaze, delivering rich umami, caramelised notes and exceptional depth of flavour.

Dark cherry, salted caramel, tobacco leaf and old oak.
Course Four
Cape Grim Prime Rib
Cape Grim prime rib with an Eagle Rare bourbon and red wine reduction, pairing robust beef character with layers of oak, dark fruit and warming spice.
Paired with · Double Eagle Very Rare
Twenty years in oak. Dark fruit, caramel, vanilla cream and polished leather.
Course Five
Sticky Date Pudding
Sticky date pudding finished with Eagle Rare bourbon butterscotch, bringing together rich caramel, dried fruit and spice to conclude the experience.
