The night
Independent bottling, taken seriously
That Boutique-y Whisky Company built its reputation on hunting down casks nobody else was pouring, bottling them small, and putting a hand-drawn comic-book label on the front. Behind the artwork sits some of the most quietly serious independent bottling in the business.
On 2 September we are opening six of them together: a worm-tub Speyside at full cask strength, a 27 year old Highland single cask, a 33 year old grain from a distillery that no longer exists, and three rums from Haiti, the Netherlands and Mauritius. Simon McGoram from Atom Brands, the team behind Boutique-y, walks the room through every one.
What sits in the pack
$1,265
of whisky and rum on the shelf, poured into a flight of six 15mL samples. The Glen Garioch alone is a $400 bottle limited to 189 across the world.
Packs are posted ahead of the night so you are pouring alongside the hosts, not watching someone else drink.

The line-up
What is in the pack
Three Scotch, three rum, every one of them independently bottled. Your pack holds a 15mL sample of each one.
Single Grain Scotch
Dumbarton 33 Years Old
Distilled in 1992 in a vast Glaswegian grain plant that closed in 2002 and has since been pulled down. Thirty-three years in a refill hogshead has turned it into something closer to pastry than to spirit, and the stock behind it is finite in the most literal sense.
- Sweet cereal, fresh-baked shortbread and vanilla wafers
- Tropical fruit, coconut and spearmint
- Pineapple and cedar into a smooth, mature finish
- Region Lowlands, Scotland
- Cask Refill hogshead, single cask, 236 bottles
- Strength 45.8%, in homage to the old 80 UK proof
Single Malt Scotch
Glen Garioch 27 Years Old
A single refill sherry butt from Oldmeldrum, filled twenty-seven years ago and left alone. Boutique-y call it time travel in a glass, and they are not overselling it: this is the funky, fruity, faintly wild Highland style that the modern distillery no longer makes. One hundred and eighty-nine bottles exist.
- Polished oak, rich malt and ripe-fruit funk
- Brown banana, gooseberry and warm laminate
- Burnt cream, dense oak and leather, closing on guava
- Region Highlands, Scotland
- Cask Refill sherry butt, single cask, 189 bottles
- Strength 45.8%, in homage to the old 80 UK proof
Single Malt Scotch
Wormtub 10 Years Old, Batch 7
An undisclosed Speyside distillery still running worm-tub condensers, which leaves the spirit heavier and meatier than the modern norm. Re-racked into first-fill sherry and bottled at full cask strength.
- Dried fruit, leather and dark chocolate
- Robust, meaty malt with red berries and walnut
- Flamed orange peel and warming sweet spice
- Region Speyside, Scotland
- Cask First-fill sherry, natural colour
- Strength 58.4%, cask strength
Pot Still Rum
Flying Dutchman 8 Years Old
Double pot-distilled at Zuidam in the Netherlands and left eight years in a very old Pedro Ximénez sherry cask. Dutch precision pointed at something deep, vinous and a long way from light.
- Liquorice and anise opening into red berries
- Red grapes, tangy plums and plump sultanas
- Sticky ginger cake, earthy coffee and cracked pepper
- Origin Netherlands
- Cask Very old ex-Pedro Ximénez sherry
- Strength 51.9%, bottled without additives
Cane Juice Rhum
Labourdonnais Mauritius 5 Years Old
Cane juice, column distilled in the agricole style on Mauritius, then five years in an ex-Pedro Ximénez cask. A light island spirit talked into behaving like fruitcake.
- Floral and perfumed, with dried currants and raisins
- Fresh-planed oak and Army & Navy sweets
- Rich fruitcake palate, dry and spicy finish
- Origin Mauritius
- Cask Ex-Pedro Ximénez
- Strength 49.8%
Cane Juice Rum
Haiti 18 Years Old, Batch 4
From Haiti's best-known producer, six years ageing at source in the tropics and twelve more in the UK. Batch four is the last of the stock, and aged Haitian rum does not come around again.
- Toasted almonds, burnt orange oil and grapefruit
- Coconut flakes, red apple and ground coffee
- Creamy caramel into a peppery, oaky close
- Origin Haiti
- Style Cane juice, column still, no additives
- Strength 57.2%

How to watch
Pour at eight, we will do the rest
The tasting streams live and free on both Facebook and YouTube. No login, no link in an email you cannot find, no software to install. Open either page at 8:00pm AEST on Wednesday 2 September and we will be there.
Bring your questions. The comments are read out live, and Simon answers them.
Details
Before you join
Do I need a pack to watch?
No. The stream is free and public on both Facebook and YouTube. The pack is what lets you taste along with the hosts rather than take our word for it.
When will my pack arrive?
Packs are posted well ahead of the night so they land before 2 September. If yours has not turned up two days out, email us and we will chase it.
What if I cannot make it on the night?
The stream stays up on both platforms afterwards, so you can pour your pack whenever suits and watch it back. You will miss having your questions answered live, which is the best part of it.
Can I buy the full bottles?
Yes, and several of them are strictly limited. Every bottle in the flight is linked above, and anything still standing after the tasting tends not to stand for long.
Is there an age requirement?
You must be 18 or over to order a pack, and someone 18 or over must be home to sign for the delivery.
