The third chapter in the series takes everything from Unexpected II and tightens it up. Distilled from organic “Vanessa” barley, then matured for over a decade across multiple sherry casks, Oloroso, PX, Amontillado and Fino, all resting in Couvreur’s humid underground cellars.

That mix of casks doesn’t just add flavour. It builds layers.

On the nose, it opens rich and concentrated. Dried fruit, spice and oak come through first, backed by cocoa, almond and a slightly earthy depth that gives it real presence.

The palate is full and structured. Malt sweetness, dark chocolate and candied fruit roll through, followed by toasted oak and spice. There’s weight here, but it stays controlled, nothing runs away from you.

What separates this from the earlier releases is the integration. The casks aren’t competing, they’re working together. You get PX richness, Fino lift, Oloroso depth, all sitting in balance.

The finish is long and warming. Citrus, spice and dry oak carry through with a clean, bright edge that keeps it from feeling heavy.
