Unexpected II isn’t just a name. It’s a reflection of how this whisky is built, from organic “Vanessa” barley, distilled with character, then matured for a decade across multiple sherry casks including Oloroso, Amontillado and Pedro Ximénez.
That mix of casks is where the magic sits. Not one style dominating, but layers stacking on top of each other.
On the nose, it opens rich and textured. Almond, cocoa and raisin lead, backed by floral notes and a slightly earthy, cellar-driven depth that’s very Couvreur.
The palate is full and unctuous. Candied fruit, figs, orange zest and marzipan roll through first, followed by hazelnut, mocha and a deeper sherry richness that builds without becoming heavy.
There’s a weight here, but it’s controlled. The different sherry casks keep it moving, adding contrast rather than just sweetness.
The finish is long and warming. Citrus, roasted nuts and spice (nutmeg, clove, cinnamon) carry through, leaving a dry, structured edge that keeps it balanced.
