This is where Michel Couvreur starts… but it still doesn’t follow the rules.

“The Unique” is built from both malted and unmalted cereals, distilled using a mix of pot still and Coffey still methods, then matured in oak before resting in Couvreur’s underground cellars in Burgundy. It’s a different approach from the outset, blending styles, grains and techniques into something deliberately outside the norm.

This isn’t about heavy sherry or bold peat like the rest of the range. It’s lighter, cleaner, and more about texture and finesse.

On the nose, it opens soft and lifted. Floral notes, almond and vanilla lead, backed by fresh cereals and a gentle citrus edge that keeps it bright.

The palate is smooth and rounded. Pear, coconut and vanilla glide through first, layered with light grain sweetness and a subtle spice underneath. It’s delicate, but not thin, more about flow than weight.

The finish is clean and refined. Vanilla, soft oak and a faint herbal lift carry through, leaving a light, easy warmth.

This isn’t a powerhouse whisky.

It’s a different kind of drink, built around balance, subtlety and the idea that whisky doesn’t always need to be heavy to be interesting.
