“Pale Single Single” is exactly what it sounds like, a single malt from a single distillery, drawn from a single cask, then matured in sherry wood inside Couvreur’s underground Burgundy cellars.
Typically aged around 12 years in Amontillado or Fino-style sherry casks, this one leans away from heavy PX richness and instead focuses on finesse, clarity and structure.
On the nose, it opens delicate but layered. Green apple, pear and citrus sit alongside white flowers and almond, with a faint saline edge that gives it lift.
The palate is clean and precise. Fresh fruit, vanilla and soft malt glide through first, followed by light spice and gentle oak. There’s a silky texture here, but it stays focused rather than heavy.
What really sets it apart is that subtle coastal note, a light iodised edge that threads through the fruit and keeps everything feeling fresh and slightly savoury.
The finish is long and elegant. Floral, lightly spiced and just a touch dry, tapering off with control rather than weight.
This isn’t a big whisky.
