This is whisky in its early form.
“Clearach” literally refers to new or young spirit, and that’s exactly what this is. A single malt distilled in Scotland, then matured for around 2–3 years in fresh Pedro Ximénez sherry casks in Couvreur’s humid Burgundy cellars.
It’s not trying to hide its youth. It leans into it.
On the nose, it opens light and slightly restrained. Fresh cereal, almond and soft vanilla come through first, followed by gentle dried fruit and a subtle floral lift.
The palate is where it shows its character. Malty, sweet and lively. Think honey, grain, vanilla and light spice, with that PX cask influence adding a soft richness without overwhelming the spirit.
There’s a rawness here, but it’s intentional. A slightly prickly edge, a bit of heat, and a freshness that reminds you this hasn’t been sitting in oak for decades.
The finish is clean and gently spiced. Vanilla wafer sweetness, white pepper and light oak drift out, leaving a dry, slightly warming tail.
This isn’t polished. It’s not refined.
It’s a look at whisky before it becomes something else, shaped by cask, but still very much alive.
