This is Michel Couvreur at its most unapologetic.

Blossoming Auld is built to echo the great sherried malts of another era. Scottish single malt, shipped to Burgundy and matured in old Pedro Ximénez casks inside humid underground caves. Not finished, not touched up… fully shaped by cask and time. Old-school in the best way.

The nose opens dense and expressive. Stewed plums, raisins and dark cherries lead, backed by chocolate, treacle and warm baking spice. There’s a richness here that leans more cellar than distillery, deep, slightly earthy, and seriously inviting.

On the palate it’s all texture. Thick, oily and mouth-filling. PX sweetness rolls through first, fig, date, molasses, before spice and oak tighten things up. Cocoa, cinnamon and a touch of bitter orange keep it structured, never letting it drift too sweet.

The finish is long and deliberate. Dried fruit, chocolate and spiced oak linger, with a gentle dryness that pulls everything back into balance and leaves you reaching for another sip.

This isn’t a modern sherry finish. It’s full immersion. Old casks, long ageing, and a philosophy that puts the barrel above everything else.
